Banana Bread

1 3/4 c. flour
2/3 c. sugar
2 tsp. Baking Powder
1/2 tsp. Baking Soda
1/4 tsp. Salt
1 c. Mashed ripe bananas (2-3 ripe bananas)
1/3 c. Shortening
2 Tbs. Milk
2 Eggs
1/4 c. Chopped Nuts (Optional)

In a large bowl combine 1 cup of the flour, sugar, baking powder, baking soda, and salt. Add mashed banana, shortening and milk. Beat with an electric mixer on low speed until blended, then on high for 2 min. Add eggs and 3/4 c. flour; beat well. Stir in nuts. Pour batter into a greased 8x4x2 inch loaf pan. Bake in a 350° oven for 55 to 60 min.
